morning glory muffins

I love carbohydrates, so it comes as no surprise that I love having muffins for breakfast. They're a great breakfast to grab and walk out the door with, and these morning glory muffins are slightly healthier than other muffin alternatives (hi, double chocolate chip muffins). The recipe calls for a half all-purpose flour and half whole wheat flower mix, oat bran, and shredded carrots- healthier ingredients than what I usually put in my muffins. The coconut, applesauce, raisins, and walnuts create a delicious flavor that isn't overly sweet.



With the cinnamon and orangey color of these muffins, they make for the perfect start-of-fall treat when the weather starts to cool down. Although it's only September, Dallas has had a surprising cold front with the morning breeze being a cool 62 degrees. For these 4 weeks, I'm on an elective Toxicology rotation. The schedule is light (weekends off, short days!) and functions as more of an over-the-phone consult service with the North Texas Poison Center. With the weather being exceptional this week, the group did a walk and talk presentation on poisonous plants at the Fort Worth Botanic Garden. These muffins would make for a fantastic post-stroll treat with a cup of coffee or tea and a good book.




Parts of the book pictured above are a book I'm currently reading called Other Minds: The Octopus, The Sea, and the Deep Origins of Consciousness by Peter Godfrey-Smith. Admittedly, I have a bad habit of starting other books while still reading another (although I justify it with thinking that it's ok as long as the two are not related topics), so I've been on this book for a few months. It's a more scientific read than what I would read leisurely, but after reading The Soul of an Octopus by Sy Montgomery, the topic of octopuses has piqued my interest. They're incredibly beautiful and highly intelligent animals.
